Pork Belly Burnt Ends

Ingredients:

  • pork belly, sliced into 1.5”x1.5” cubes
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 3 tablespoons butter
  • roughly 1 cup of your favorite dry rub
  • roughly 1 cup of your favorite BBQ sauce

Directions:

Preheat smoker to 250 degrees
Slice belly into cubes, trim excess fat
Toss cubes with olive oil and dry rub until well coated
Place cubes directly on rack in smoker.  Smoked for 3 hours
Take cubes off smoker and place in aluminum pan.
Toss cubes with butter, honey, and BBQ sauce
Cover pan with aluminum foil and place pan on smoker for 90 minutes
Remove foil and smoke for 20 minutes
Remove from smoker and enjoy!
